The Chocolate Chip Pumpkin Loaf

Pumpkin Loaf Hero-2Pumpkin works in so many things other than pie. Try making this perfect Autumn loaf with chocolate chips for a warm spiced treat that can be served any time of the day. The spice in this cake will have your house smelling great, and the brown sugar topping gives you a crunchy texture on top. The molasses in the centre creates a warm almost creamy pudding like texture that helps keep this loaf moist for days.


    420 g / 2 cups Pumpkin puree
    4 eggs
    215 g / 1 cup Mirage Margarine
    160 ml / 2/3 cup Milk
    10 ml / 2 tsp Vanilla extract
    500 g / 2 1/2 cups Granulated sugar
    435 g / 3 1/2 cups All-purpose flour
    6 g / 2 tsp baking soda
    4 g 1 1/2 tsp Salt
    15 g / 2 tbsp Pumpkin pie spice
    600 g / 2 cups Chocolate chips
    100 g / 1/2 cup Brown sugar for garnish
    84 g / 1/4 cup Molasses for garnish


  1. Preheat oven to 350F(175C)
  2. Line two loaf pans with parchment paper cover the bottom and sides.
  3. In a large bowl with an electric mixer, combine the Mirage Margarine, sugar, vanilla and eggs on medium-high speed for 4 minutes, making the mixture light and fluffy. Be sure to scrape down the sides of the bowl several times to mix the batter evenly.
  4. To the mixture add in the pumpkin puree and milk, mixing just until combined.

  6. In separate bowl combine the flour, baking soda, salt, pumpkin spice and chocolate chips with a whisk. Add these dry ingredients to the wet and combine with the electric mixer until you can no longer see any dry flour.

  8. Pour the prepared batter evenly into the lined pans, if you have a scale use it to ensure that each pan has the same amount of batter. Create a long trench along each loaf, and pour 2 tbsp of molasses into each loaf. Now use the end of a spoon or fork to swirl the molasses gently into the batter.

  10. Sprinkle the tops of each loaf with brown sugar and bake in the oven for 50-60 minutes, or until a toothpick inserted into the centre comes out clean.

  12. Remove from the oven and allow the loaf to fully cool before serving.
