Cinnamon Roll Ups

Keep things rolling around the breakfast table, and try making these Cinnamon French Toast Roll Ups for your whole family! Not only are they delicious, but they’re pre-portioned and super simple to share. Make your family smile on Sunday morning, and prepare them this super satisfying breakfast treat.

Yield: 8 servings


  • 113 g / 1/2 cup Mirage margarine, plus more for greasing muffin tin
  • 50 g / 1/4 cup granulated sugar
  • 18 g + 163 g / 4 tsp + 3/4 cup brown sugar, packed
  • 18 g / 2 tbsp cinnamon
  • 21 g / 3 tbsp chopped walnuts (optional)
  • 16 slices fresh soft sandwich bread, crusts removed
  • 3 large eggs
  • 80 ml / 1/3 cup milk
  • 10 ml / 2 tsp vanilla extract


  1. Brush 8 cups of a muffin tin generously with Mirage margarine. Sprinkle 1/2 teaspoon (2.25 grams) of brown sugar and about 1 teaspoon (2.5 grams) of chopped walnuts (if using) into the bottom of each cup. Set aside.

  3. In a medium bowl, beat together the Mirage margarine, granulated sugar, 3/4 cup (163 grams) brown sugar, and cinnamon until smooth.

  5. Flatten bread slices slightly with a rolling pin. Spread each slice with about 1 tablespoon (20 grams) of the Mirage margarine mixture.

  7. Cut each bread slice in half, vertically. Roll one slice jelly roll style from the bottom up. Roll the second half around the first, and continue rolling two more pieces around into a spiral.

  9. Place each roll up into a muffin cup.

  11. In a large bowl, whisk together the eggs, milk and vanilla.

  13. Slowly divide custard evenly between each muffin cup and press gently on roll up to help saturate with the custard. Cover with plastic wrap and and allow to rest; 20 minutes.

  15. Preheat oven to 350°F (180°C).
  16. Bake in oven for 40 to 45 minutes, until the top is golden and crispy.
  17. Remove pan from oven and allow to rest for 5 minutes.
  18. Run a paring knife or small offset spatula around the edge of each muffin cup and release the Cinnamon French Toast Roll Up. Serve warm.

Chef’s Notes:

  • Be sure to use a fresh, soft loaf of bread for this recipe. Stale or crumbly bread will be difficult to roll up.
